Tres Leches Cake

1Whisk egg yolks with a hand blender, gradually adding granulated sugar until light and foamy.egg yolks: 6, granulated sugar: 3/4 c

2Add whole milk and vanilla extract .whole milk: 1/2 c, vanilla extract: 3/4 tsp

3Combine.

4In a second bowl, beat egg whites until frothy.egg whites: 6

5Then gradually add remaining granulated sugar and keep beating until medium-stiff peaks form.granulated sugar: 4 tbsp

6Fold the meringue into the egg yolk mixture.

7In a separate bowl, whisk together all-purpose flour , fine sea salt , and baking powder .all-purpose flour: 1.5 c, fine sea salt: 1/2 tsp, baking powder: 1/2 tbsp

8Add the flour mixture to the egg mixture and fold until thoroughly combined.

9Spray a 9x13 cake pan liberally with oil and add the cake batter.

10Bake the cake at 350 for ⏱️ 25-30 minutes .

11Let cool completely.

12Whisk evaporated milk , sweetened condensed milk , and heavy cream together, along with vanilla bean .evaporated milk: 12 oz, sweetened condensed milk: 14 oz, heavy cream: 1/2 c, vanilla bean: 1

13Prick the cooled cake with a fork.

14Pour the milk mixture over the cake.

15Cover with plastic and let chill in the refrigerator for at least ⏱️ 1 hour or overnight.

16In a saucepan , combine sugar and milk .sugar: 1.25 c, milk: 4 c

17Set over medium heat until it starts to bubble, then reduce heat.

18Let cook while whisking often for about ⏱️ 90 minutes or until thick and golden brown.

19Spread a thin layer of dulce de leche on top of the cake.

20Top with whipped cream and cinnamon .cinnamon
